Our vines are sheltered in the foothills of Carter's mountain in the Blue Ridge, Virginia. The Clayish soil includes a significant proportion of rocks. Our block of Viognier is facing south on the warmest slopes of the estate. Viognier grapes are hand-harvested early in the morning and are pressed whole cluster. After cold settling, two-thirds of the juice are fermented at low temperature (50-60°F) in stainless steel and one-third fermented in new and used French oak barrels. After fermentation, the lees are stirred for about 2 months in tank and in barrels. After six months of aging on fine lees the result is a wine that is harmonious with a nice unctuosity.
