Product Description
Pinot Noir grapes were hand harvested and then crushed into small temperature controlled tanks. Following a 2 day cold soak that promoted excellent extraction of color, aroma and flavor, the lots were inoculated with yeast to undergo primary fermentation. The must was gently pumped over 4-5 times daily for increased extraction. After pressing the wine was transferred to French oak barrels to undergo malolactic fermentation and aging for 16 months.
